Happy Chinese New Year! Let’s celebrate!

Get set to ring in the Year of the Rooster. It’s a time for celebrating good health, good fortune and happiness whilst recognising centuries-old traditions and customs. We have a few ways – including some great tips – to bring a little Chinese New Year celebration into your home.

Enjoy a feast
Duck pot stickers with hot and sweet dipping sauce
Makes 14

INGREDIENTS
½ a whole roasted duck, skin and at discarded and meat picked off
4 spring onions, white part only
1 knob of ginger, finely grated
1 clove of garlic
½ tsp. Chinese five spice
½ tsp. sesame oil
3 tbs. soy sauce
1 tbs. fish sauce

12-14 gow gee wrappers (thicker style wonton wrapper)
1 tbs. vegetable oil
300 ml water
3 sprigs of coriander, for garnish

Hot and sweet dipping sauce:
4 tbs. plum sauce
Pinch sugar
1 tbs. mirin
2 tbs. soy sauce
2 tbs. chilli sauce
1 tbs. water

METHOD

  1. In a food processor, add the duck, onion, ginger, garlic, five spice, sesame oil, soy and fish sauce. Pulse until the duck in shredded and all the ingredients are combined.
  2. Place a single wonton wrapper in the palm of your hand and add one tablespoon of the meat mixture. Gently push the meat in to the centre of the wonton wrapper and, at the same time crimp the edges to seal the parcel. It should resemble a half moon. Repeat the process.
  3. Heat oil in a large frying pan that has a lid. Add the dumplings and cook for 2 minutes on one side or until golden brown. Now add the water, place the lid on the pan and steam for 203 minutes.
  4. For the sauce, whisk all the ingredients together.
  5. To serve pour sauce into a shallow serving dish and arrange the wontons on top. Scatter coriander over the top and serve immediately.

How to use your bamboo steamer
1. Fill the steamer baskets – First, line the bottom of the basket with lettuce or cabbage leaves to prevent the food from sticking.
Then add the food you want to cook in a single layer. Cover firmly with the lid.
2. Fill a pot with approx. 5cm of water – Make sure your steamer basket fits snugly in (or over) the pot and isn’t in danger of tipping over. Also make sure the bottom layer of food sits above the water line, without touching it. A wok is traditionally used, but we find a shallow skillet works just as well. Bring the water to a simmer.
3. Place the steamer over the pot – Once the water is simmering, settle the steamer basket over the pot. Keep an eye on the water level and add more if the pot starts to go dry. Check your food periodically until it is done to your liking.
